Featured Recipe: Chef Mark J. Olson C.E.C. -- Goat Cheese and Oven-dried Tomato Strudel with Basil Oil

Chef's Comments: Make Basil oil ahead of time, it can be stored for up to 3 weeks in the refrigerator. Chef Olson demonstrated this recipe at the "Stirring the Pot Picnic Series" at the Monroe Arts Center in Monroe.


Ingredients - BASIL OIL
:
  • 1 cup fresh basil leaves
  • ½ cup common olive oil
  • S&P to taste
Directions:
  1. Pan-steam the basil leaves in a small amount of water until wilted. 
  2. Remove them from the pan and squeeze them dry. 
  3. Place them in a blender with the S&P and oil and blend well. 
  4. Refrigerate overnight, strain through a fine mess and store refrigerated for up to three weeks in a pour bottle.
Ingredients -STRUDEL:  
  • 6 oz. local goat cheese
  • ½ cup softened oven-dried tomatoes
  • ¼ cup toasted hickory nuts
  • 3 sheets phyllo dough
  • 2 Tablespoons melted Wisconsin butter
Directions: 
  1. Crumble the goat cheese, soften the tomatoes, if necessary, and toast the hickory nuts.
  2. Working quickly, lay out one sheet of phyllo dough and brush with the melted butter.
  3. Repeat this step with the two remaining sheets of dough. 
  4. Distribute the goat cheese evenly along the bottom edge of the phyllo. 
  5. Top the cheese evenly with the oven-dried tomatoes and hickory nuts. 
  6. Roll up the dough pressing the roll into an even tube as you go. 
  7. Place on a sheet pan and make 7 evenly spaced diagonal slits in the top of the strudel. 
  8. Drizzle with the remaining butter and bake at 400 degrees for about five minutes or just until golden brown. 
  9. Allow to rest for 2-4 minutes, slice and drizzle with basil oil.

Every Sunday afternoon from 2 - 6 p.m., enjoy dancing with live music performed by some of the most popular old-time, big band and oldies bands in southern Wisconsin. Enjoy a light meal in our authentic Old World Ratskeller Restaurant before the dance from 9 am - 2 pm, or afterward from 5 - 8 pm.

Join in on the family fun at Turner Hall's Squeezebox Night!
Dust off that old accordion or button box that's been sitting in the attic for years and bring it to the Turner Hall's Ratskeller every third Tuesday evening of the month!

Squeeze Box Night, an informal monthly jam session, was introduced in May 2007 by Turner Hall's Swiss Heritage Series as part of an on-going schedule of programs and events that feature Swiss traditions and folk culture. Intended for all ability levels and all types of accordion-like instruments, local accordionist Del Heins is on hand to lead the playing and even offer helpful tips and advice for those who perhaps haven't touched an instrument in years.
 Turner Hall of Monroe felt the time was right to offer people a chance to re-acquaint themselves with the instrument in a fun and non-threatening way, as well as offering veteran players a chance to come together and play. The Ratskeller Restaurant's menu offers a wide variety of fare for those enjoying a great family fun evening out! Join us for Squeezebox Night Tonight!
