Apple Macadamia Nut Coffee Cake

Chef's Comments:  Great for Breakfast, Brunch or Desert.

Dough Ingredients:

  • 1/2 C. Milk
  • 4 Tbl Butter
  • 1/4 C. Yogurt
  • 1/4 C. Sugar
  • 1 tea. Salt
  • 2 tea. Vanilla
  • 2 Eggs
  • 2 tea. Cinnamon
  • 3 C. Flour
  • 2 pks. Yeast
Nut Mixture
  • 6 oz. Crushed Macadamia Nuts
  • 5 Tbl Butter
  • 1/4 C Brown Sugar
Apple Filling
  • 8 Apples peeled, cored and sliced thinly
  • 3 Tbl Cinnamon
  • 2 tea. Vanilla
  • 1/4 C. Sugar
  • 1/4 C. Brown Sugar
  • 2 Tbl. Grated Orange Peel
Directions:
  1. Butter 9 x 9 glass baking, dish set aside
  2. Add first 6 ingredients into microwavable bowl.
  3. Microwave for 45 seconds, stir and check temp, heat til 130' is reached.
  4. In another bowl add 1 cup flour, cinnamon, and yeast, mix well
  5. Pour warm liquid over dry ingredients (130')
  6. Mix for three minutes by hand until well incorporated.
  7. Add eggs, one at a time
  8. Add remaining flour, knead 7 minutes until dough is shiny and springy
  9. Put oil in bowl, add dough ball, roll over to cover top with oil.
  10. Cover with clean kitchen towel, place in warm place and allow to double. 40-60 minutes
  11. Peel, core and slice apples, place in bowl
  12. Mix apples with apple filling ingredients above
  13. Crush Macadamia nuts with rolling pin
  14. Punch down dough and divide into three equal balls.
  15. Roll out on floured board to 10 in. by 10 in.
  16. Brush with melted butter.
  17. Place in butter baking dish.
  18. Top with 1/3 of the apple filling, spread over to make each layer even with apples.
  19. Repeat with second and third layers
  20. Top layer with nut topping
  21. Bake for 40-60  mins. in 350 oven until golden brown rotate in oven every 20 mins.
  22. Cool in rack, Slice and serve warm.
Enjoy as a desert by topping with ice cream, whipped cream or caramel.
